Turkey Meat Loaf


1 1/2 tablespoon olive oil
1 large shopped onion
3 celery stalks chopped
1 carrot, chopped fine
1 1/2 lbs ground turkey
1 1/2 fresh white bread crumbs
2/3 cup sundried tomatoes chopped
1/2 cup milk
2 eggs
2 teaspoon dried sage
2 teaspoon dried oregano
2 teaspoon salt
2 teaspoon pepper

Heat oil and add onion, saute for 5 minutes, add celery and carrots and saute for 15 minutes.
Mix all ingredients together in a bowl and transfer to a loaf pan. Bake at 375 degrees for one hour. Spread ketchup over top and cook for 15 more minutes. Cool, slice and serve.
Great with fruit salad and corn on the cob.
