1 can (14 oz.) chicken broth
1/2 cup white wine
1 8 oz. package sliced mushrooms
1 medium Vidalia onion, cut into cubes
4 roma (plum) tomatoes, cut into fourths and sliced
1 medium red bell pepper, cut into cubes
1 medium yellow bell pepper, cut into cubes
3/4 pound uncooked peeled shrimp
3/4 pound scallops
3/4 pound cod filet, cut into cubes
1/4 cup chopped cilantro
4 cups hot cooked rice
Heat onion, mushrooms, wine, and broth to a boil in a 4-quart saucepan. Stir in tomatoes and peppers, return to a boil. Stir in shrimp, scallops, and cod, return to a boil; then reduce heat. Cover and simmer for 5 to 7, minutes until shrimp are pink and firm. Stir in cilantro. Serve in a bowl over rice.
