This is a quick and simple dessert that is great for any occasion. The sugar-free butterscotch pudding tastes surprisingly like caramel when prepared.
1 large can crushed pineapple (with juice)
1 and 1/2 boxes sugar-free butterscotch pudding
8 oz. fat-free or sugar-free Cool-Whip
3 cups of chopped apples
Mix pineapple and dry pudding mix in bowl and set aside.
In a larger bowl combine the apples and Cool-Whip.
Add pineapple and pudding mix to the apple/Cool-Whip mix.
Stir together and enjoy!
