Baked Chicken and Rice with Vegetables

Ingredients:

6 boneless chicken breasts

1 package of chicken-flavored rice and vermicelli mix

2 medium zucchini – cut lengthwise in half, then crosswise into 3/4-inch slices

1 medium Yellow Squash – cut lengthwise in half, then crosswise into 3/4-inch slices

1 medium Vidalia-Onion – cut into 1/2-inch chunks

1 medium Red Pepper – cut into 1-inch pieces

1 medium Orange Pepper – cut into 1-inch pieces

1 and 1/2 cups water

1/2 cup garlic and herb spreadable cheese

Directions:

Heat oven to 425 degrees

Mix rice, contents of seasoning package, zucchini, squash, peppers, and onion into ungreased rectangle Pyrex dish – 13X9X4 inches.

Cook chicken in a lightly oiled skillet over medium-high heat for about 5 minutes, turning once, until brown. Remove from skillet and set aside when complete.

Add water to skillet and heat until boiling. Pour boiling water over rice and vegetable mixture; stir to mix. Stir in cheese. Place chicken on top of mixture.

Cover and bake for 30 minutes – the juice of the chicken should no longer be pink in the center of the thickest part.
