The Very Versatile Low-Carb Tortilla

We had a wonderful tip from one of our community members suggesting that we check out Xtreme Wellness High Fiber Tortillas by Ole Mexican Foods. Nutrition information for each tortilla: 71 calories, 2 grams of fat, 12 grams of fiber, 8 grams of protein, and best of all, only 5 grams of carbohydrates.

Suggestions for using the tortillas include:

  • Pizzas
  • Wraps for sandwiches
  • Tacos
  • Quesadillas
  • Bread crumbs (by putting the tortillas in your food processor on “pulse”). The bread crumbs then can be used in anything from burgers to meatloaf without adding a lot of carbs yet by adding fiber.

Finding the Ole Mexican Xtreme will depend on where you live. You can check out Walmart or Bloom to see if your stores carry them. Another option might be to order them online via an e-tailer like Schnucks, but this can be pricey.
